Cooking with Amy: pesto lasagne

Here's what you get when you mix a Mario Batali recipe with one from Giada. I like to call it pesto lasagne.



Brendan and I made the basil almond pesto & beschemella sauces from scratch, used a layer of noodles, layer of eggplant, layer of noodles. The meat is Italian-seasoned turkey mixed with pork sausage & we added chopped zucchini. The ricotta mixture has blanched spinach folded into it.

If tomato sauce makes your tummy cranky (like it does with mine from time to time), this is a great alternative
